Zucchini Noodles, Chickpeas, and Feta

This morning I had an early start at the Union Square Greenmarket. It is official summer is in full swing over there. There is a plethora of zucchini, heirloom tomatoes, strawberries, snap peas and more! It is safe to say that summer is my favorite season when it comes to the market (don't tell any brussels sprouts I said that!)

With the weather warming up I opted to keep the ingredients in this dish raw, not only does it have cooling effects on the body but we also get to retain all of the nutrients.

With it being bathing suit season we all want some delicious options that will keep the weight off and zucchini is an amazing versatile vegetable that will keep you trim for summer. One cup contains ONLY 20 calories, it is 95% water by weight and an excellent source of fiber. What more can you ask for?

Zucchini Noodles, Chickpeas, and Feta

Ingredients:

  • 2 small zucchini or 1 large

  • 1/3 cup chickpeas

  • 2 Tsp feta cheese

  • 1/4 cup loosely packed mint leaves

  • 1 lemon -1 t zest, 3 Tsp juice

  • 1 tbsp extra virgin olive oil

  • salt and pepper to taste

Instructions:

Using a julienne peeler or vegetable peeler if you do not have a julienne peeler peel zucchini into noodles or ribbons. Place in a bowl and add chickpeas, feta and mint.

In a separate bowl whisk together lemon juice and olive oil. Pour dressing over salad and top with lemon zest, season with salt and pepper to taste.

How easy was that a simple, delicious waistline approved meal. Now time for me to go enjoy my lunch!
