Saucy Eggs

My favorite meals are usually the ones that I don’t plan to make, they come more organically in the moment when I am having a craving and most often they are made out of staple ingredients I always have on hand in my kitchen.

Eggs are a favorite of mine especially when I get to have them for dinner! Breakfast for dinner is one of those things that remind me of my childhood, and I am all about the foods that can comfort you in emotion as opposed to calorie.

So often we look for comfort in food and when we are able to take comfort in a memory we are able to let go of the need to overeat or indulge in unhealthy choices.

Try out this dish anytime of the day when you are craving something saucy and comforting, skip the pasta and pizza may end up leaving you tired and try thy this protein packed dish that will have you feeling more uplifted.

Saucy Eggs

Ingredients:

  • 1 t olive oil

  • ¼ cup carrots, diced

  • 1 garlic clove, chopped

  • 1 shallot or ¼ cup yellow onion, diced

  • 1 cup tomato sauce (fresh pureed tomatoes or canned)

  • 1 t dried oregano, or 1 T fresh if available

  • 2 eggs

  • red pepper flakes

  • salt

Instructions:

Place a pan over medium-high heat, add oil and heat; once warm add carrots, garlic and onion and sauté 5-6 minutes or until fragrant. Next add the tomato sauce oregano pinch of red pepper and salt, cover and let simmer until sauce reduces slightly, about 5 minutes. Stir the sauce and be sure it is not sticking or burning; crack both eggs into the sauce, season with salt and pepper and cover and allow to cook until egg whites are firm about 5 minutes.

Remove from heat and serve.

That’s it! Just a few staple ingredients and 20 minutes of your time.
