Roasted Heirloom Carrots with Feta

Heirloom tomatoes aren't the only vegetable that deserves attention this time of year, because lets face it heirloom carrots look gorgeous and taste delicious. Check out this easy to make dish; 4 ingredients and 20 minutes is all you need.

Roasted Heirloom Carrots with Feta

Servings - 4


  • 1 bunch Heirloom Carrots, peeled and sliced into quarters

  • 1 T truffle oil

  • 1/4 cup feta cheese, crumbled

  • handful of parsley leaves

  • salt, to season


Preheat oven to 400. While preheating peel the carrots and slice in half and then into long strips. Place in a baking sheet and toss with oil and salt. Place in the oven and cook for 15 minutes, longer for softer carrots. Remove from oven and top with feta cheese and parsley.

That’s it! Easy and delicious, have it as a side to a dinner or enjoy a larger serving for a vegetarian dinner paired with some quinoa.
