Farro, Cherry, and Celery Salad

When it is hot out like it is this week in NYC it is important to keep your body cool. I have been living on green juice and salads since Monday. Now some people think "salad, how boring" but I think I have proved to you guys how fun salads can be. It is all about changing up the flavors and using seasonal ingredients.

Earlier this week I shared a recipe for a Corn, Peach and Avocado Salad and now I share with you a salad incorporating another summer favorite fruit, cherries.

Farro, Cherry, and Celery Salad

Serving Size - 2

Ingredients:

  • 1/2 cup Farro, cook according to package

  • handful of cherries, about 15, seeds removed and halved

  • 2 stalks celery, diced

  • 1/4 cup feta cheese, chopped

  • 1 T olive oil

  • 2 T fresh lemon juice

  • salt and pepper to taste

Instructions:

Place farro in a pot and cook according to package. While the farro cooks, pit the cherries and slice in half. Next dice the celery and add to a bowl with the cherries. When the farro is done let cool and add to celery and cherries. Lastly, add feta cheese and top with lemon juice olive oil and toss. Season with salt and pepper to taste.
